Pukacapas from Bolivia
Recipe of Pukacapas
Ingredients:
3 cups flour
2 Tsp. Baking powder
¾ tsp. salt
1/3 cup butter
2eggs
1/3 cup milk
Ingredients for the filling:
1 large onion, cut into very small pieces
1 small red pepper cut into small pieces
1 small green pepper cut into small pieces
1 tomato cut the same way as the other ingredients
1 green onion
2 tablespoons chopped parsley
2 garlic cloves finely chopped
3 cups of grated cheese
½ cup of green olives chopped also
Cook this filling over slow fire, for ten minutes with ¼ cup oil. Then add the cheese after you put the fire off.
Meanwhile prepare the dough:
Put in a bowl all dry ingredients, add butter and mix well. Then mix the eggs, the milk and add them to the dry mixture. Knead well. Let it rest for some minutes.
To prepare the Pukacapas:
Stretch small pieces of dough, on a flour sprinkled table, cutting them in round forms.
With a spoon put the filling in the middle, being careful not to get to the borders, as you must close it afterwards. Cut another round piece and put it on top of the first one, be sure to wet slightly the borders so they stick together.
Make small folds in the borders, getting them together.
Put them on an oiled baking dish, paint them with a brush, using an egg yolk or milk, before taking them to the oven.
Let them cook into a preheated oven for about twenty minutes.
Serve them warm. The go nicely with some with rice or with a tomato salad. And some red wine!!.
