Mocochinchi from Bolivia
Recipe of Mocochinchi (refreshment)
2 pounds of dried peaches
3 liters of water
3 sticks of cinnamon
1 cup of sugar
Soak in a saucepan the peaches in the water, let them stand for 6 hours using one liter of water.
When they are well hydrated add the rest of the water, the cinnamon and the cloves and the sugar. Put this mixture on low fire for about two hours, covered, adding each ten or fifteen minutes a half cup of water.
If it’s not sweet enough, add some more sugar before taking it off the fire.
Cool it thoroughly before serving it, and in each glass put a peach at the bottom.
